This is a certified organically grown, washed process coffee produced by a co-op of farmers largely identified as Tzotzil, an indigenous people group of the Chiapas region in southern Mexico. It’s a light roast, with bright flavor notes. Lots of citrus fruit - orange, mandarin, tamarind with a caramel sweetness, long finish, slightly astringent. Maybe not what most people are expecting from a Mexican coffee, which we hope is a fun surprise.
